  • Fermentation time is not the same as doubling time. During fermentation, dough traps gas and can double in size multiple times. Fermentation time is an estimate of when the yeast will exhaust its food supply and stop producing gas, leading to dough collapse. This is when the yeast runs out of fermentable sugars, causing fermentation to cease and the dough to lose its ability to retain gas.
